Med tanke p\u00e5 at oppskriftene kanskje tar litt ulik tid \u00e5 lage, kan det v\u00e6re nyttig at alle gruppene har samme oppskrift, men at dere kan variere tilbeh\u00f8ret.&nbsp;<\/p>\n\n\n\n<p>Kj\u00f8p r\u00e5varer i henhold til oppskriften, i tillegg til olje, sm\u00f8r og flytende margarin til steking. Tilbeh\u00f8ret kan varieres etter hva dere har mulighet til \u00e5 kj\u00f8pe inn og ut ifra egen kreativitet.\u00a0<\/p>\n\n\n\n<p>Vi anbefaler \u00e5 starte med en liten teoridel om hvordan matfett oppf\u00f8rer seg i stekepannen. Deretter kan elevene teste og erfare dette selv. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-del-1-teori\"><strong>Del 1 \u2013 <strong>Teori<\/strong><\/strong><\/h2>\n\n\n\n<p><strong>Det er tre grunner til \u00e5 bruke fett n\u00e5r vi steker mat:<\/strong><\/p>\n\n\n\n<ol class=\"is-style-list-bg-third wp-block-list\">\n<li>Vi bruker fett for at maten ikke skal brenne seg fast i stekepannen.<\/li>\n\n\n\n<li>Fett forsterker smaken p\u00e5 r\u00e5varen.I tillegg bidrar det til \u00e5 danne en stekeskorpe, som holder v\u00e6sken inne i r\u00e5varen, slik at vi f\u00e5r et saftig resultat.<\/li>\n\n\n\n<li>Kroppen trenger fett. Ved h\u00f8y temperatur blir maten lettere brent. Felles for alle oljer er at de lett spruter n\u00e5r du steker.&nbsp;<\/p>\n\n\n\n<p>Rapsolje og olivenolje egner seg til steking fordi de inneholder mye enumettet fett.\u202fSolsikkeolje og soyaolje har et h\u00f8yt innhold av flerumettet fett og det gj\u00f8r at disse planteoljene lettere oksiderer ved h\u00f8y temperatur. Det kan gi maten d\u00e5rligere smak.&nbsp;<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-bade-margarin-og-meierismor-har-det-vi-kaller-et-innebygget-temperatursignal\"><strong>B\u00e5de margarin og meierism\u00f8r har det vi kaller et innebygget temperatursignal. <\/strong><\/h4>\n\n\n\n<p>Fettet skifter farge n\u00e5r temperaturen i stekepannen stiger. Steker du med margarin eller meierism\u00f8r er det lett \u00e5 se hvor varm stekepannen er. Fargeforandringer skjer fordi melkesukker og proteiner fra melken reagerer med hverandre n\u00e5r de blir varmet opp og gir fargeforandring, dette kalles en Maillard-reaksjon. Meierism\u00f8r t\u00e5ler varme litt d\u00e5rligere enn b\u00e5de margarin og olje fordi meierism\u00f8r inneholder mer melk. <\/p>\n\n\n\n<p>Margarin har en n\u00f8ytral og mild smak, mens meierism\u00f8r har en mer fremtredende smak. &nbsp;Du har alts\u00e5 flere valgmuligheter n\u00e5r du skal steke mat, men den beste kontrollen har du hvis du velger margarin.<\/p>\n\n\n<div class=\"mills-block-infobox wp-block-mills-block-infobox has-background has-primary-light-background-color\"><div class=\"mills-block-infobox-icon\"><i class=\"icon-IconRecepie-Difficulty\"><\/i><\/div><div class=\"mills-block-infobox-content\">\n\n<h3 class=\"wp-block-heading has-neutral-1000-color has-text-color\"><strong>Temperatursignal<\/strong><\/h3>\n\n\n\n<p class=\"has-neutral-1000-color has-text-color\">Visste du at ved \u00e5 bruke margarin i stekepannen s\u00e5 kan du enklere se hvor varm stekepannen er? Jo brunere farge det er p\u00e5 fettet i stekepannen, jo varmere er den.<\/p>\n\n<\/div><\/div>\n\n\n<h3 class=\"wp-block-heading\" id=\"h-hva-skjer-i-stekepannen\"><strong>Hva skjer i stekepannen?<\/strong><\/h3>\n\n\n\n<p>Flytende margarin, sm\u00f8r og olje opptrer ulikt n\u00e5r temperaturen i stekepannen \u00f8ker. N\u00e5r er stekepannen er varm nok?<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Flytende margarin og sm\u00f8r:<\/strong><\/h4>\n\n\n\n<p>N\u00e5r temperaturen er ca. 100 grader, begynner det \u00e5 bruse i pannen. Det skjer fordi vannet og melken koker. N\u00e5r alt vannet har fordampet vil temperaturen fortsette \u00e5 \u00f8ke, og fettet skifter farge. Jo h\u00f8yere temperatur i stekepannen, jo m\u00f8rkere farge p\u00e5 fettet.<\/p>\n\n\n\n<p>Derfor sier vi at margarin og meierism\u00f8r har innebygd temperatursignal. Det kan hjelpe oss til \u00e5 vite n\u00e5r det er ideelt \u00e5 legge r\u00e5varene i stekepannen.<\/p>\n\n\n\n\t\t<div class=\"t2-factbox wp-block-t2-factbox has-background has-primary-light-background-color\" id=\"t2-factbox\">\n\t\t\t<div class=\"t2-factbox__content\">\n\t\t\t\t<div class=\"t2-factbox__blocks t2-factbox__inner-container is-layout-flow\">\n\t\t\t\t\t\n\n<h4 class=\"wp-block-heading\">N\u00e5r sm\u00f8r eller margarin er:<\/h4>\n\n\n\n<p><strong>Lysegult:<\/strong> Temperaturen er ca. 140\u00b0C og passer til \u00e5 steke egg.<\/p>\n\n\n\n<p><strong>Lysebrunt: <\/strong>Temperaturen er ca. 160\u00b0C og passer til \u00e5 steke kylling og fisk.<\/p>\n\n\n\n<p><strong>N\u00f8ttebrunt: <\/strong>Temperaturen er ca. 180-200\u00b0C, og passer til \u00e5 steke kj\u00f8ttdeig og biff.<\/p>\n\n\n\n<p><strong>Svart: <\/strong>Temperaturen for h\u00f8y. La pannen avkj\u00f8les, t\u00f8rk ut fettet med papir og begynn p\u00e5 nytt, ellers smaker maten svidd.<\/p>\n\n\n\n<p><strong>Melkefri margarin<\/strong> vil bruse ved 100 \u00b0C , men ikke skifte farge n\u00e5r den varmes opp videre.<\/p>\n\n\n\n<p><strong>Meierism\u00f8r <\/strong>inneholder mer melk enn margarin, og t\u00e5ler varme litt d\u00e5rligere enn b\u00e5de margarin og olje. Ved h\u00f8y temperatur vil proteiner fra melken kunne brenne seg. Ved steking med meierism\u00f8r b\u00f8r temperaturen alts\u00e5 ikke v\u00e6re for h\u00f8y.<\/p>\n\n\n\t\t\t\t<\/div>\n\t\t\t\t\n\t\t\t<\/div>\n\t\t\t\n\t\t<\/div>\n\n\n<h4 class=\"wp-block-heading\"><strong>Olje:<\/strong><\/h4>\n\n\n\n<p>Kan fort bli veldig varm, men bruser ikke, siden oljer ikke inneholder vann som kan koke. Olje skifter heller ikke farge, s\u00e5 det er vanskeligere \u00e5 vite hvor h\u00f8y temperaturen i pannen er. N\u00e5r oljen begynner \u00e5 ryke (temperaturen den ryker ved kalles r\u00f8ykpunkt), betyr det at oljen er for varm, og maten blir fort brent.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-del-2-praktisk-matlaging\">Del 2 &#8211; <strong>Praktisk Matlaging<\/strong><\/h2>\n\n\n\n\t\t<div class=\"t2-factbox wp-block-t2-factbox has-background has-neutral-30-background-color\" id=\"t2-factbox-1\">\n\t\t\t<div class=\"t2-factbox__content\">\n\t\t\t\t<div class=\"t2-factbox__blocks t2-factbox__inner-container is-layout-flow\">\n\t\t\t\t\t\n\n<h3 class=\"wp-block-heading\" id=\"h-oppgave-1-hvordan-oppforer-fett-seg-under-steking\">Oppgave 1: Hvordan oppf\u00f8rer fett seg under steking?<\/h3>\n\n\n\n<ol class=\"is-style-list-bg-primary wp-block-list\">\n<li>Del klassen i grupper. Hver gruppe skal steke og observere hvordan olje, flytende margarin og sm\u00f8r oppf\u00f8rer seg i stekepannen ved \u00f8kende temperatur. <\/li>\n\n\n\n<li>Alle grupper pr\u00f8ver alt, eventuelt kan de observere hverandre i tur og orden. Ta notater underveis. <\/li>\n\n\n\n<li>Reflekter sammen rundt det dere har erfart.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-oppgave-2-lage-mat-og-steke-med-riktig-fett\">Oppgave 2: Lage mat og steke med riktig fett<\/h3>\n\n\n\n<ol class=\"is-style-list-bg-primary wp-block-list\">\n<li>N\u00e5 skal elevene teste erfaringene fra den praktiske oppgaven i matlaging&nbsp;<\/li>\n\n\n\n<li>Velg en matrett der steking inng\u00e5r, for eksempel falafel eller wraps.
