Om dere ikke har det p\u00e5 skolekj\u00f8kkenet kan kanskje du eller noen av elevene ta med hjemmefra.<\/li>\n\n\n\n<li>h\u00f8ye, smale beholdere. Dere trenger like mange beholdere som antall grupper. Man kan for eksempel bruke norgesglass eller de beholderne som gjerne f\u00f8lger med stavmiksere. <\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-del-1-teori\"><strong>Del 1 \u2013 Teori<\/strong><\/h2>\n\n\n\n<p>N\u00e5r vi lager majones, skjer det som kalles en emulsjon. Det betyr at vi blander olje og vann. Vanligvis vil olje og vann skille seg, men om du tilsetter en emulgator s\u00e5 vil blandingen av olje og vann holde seg samlet. N\u00e5r vi lager majones er det eggeplommen som er emulgatoren.<\/p>\n\n\n\n<p>En emulgator inneholder b\u00e5de en vannelskende del (<em>hydrofil<\/em>) og en fettelskende del (<em>hydrofob<\/em>). Det er dette som gj\u00f8r at den klarer \u00e5 holde vann og olje sammen. Lecitin er en popul\u00e6r emulgator i matlaging, brukt i alt fra majones og margarin til sjokolade og is.<\/li>\n\n\n\n<li><strong>Xantangummi: <\/strong>Produseres naturlig gjennom fermentering av sukker med en spesifikk bakterie. Det brukes som en stabilisator og emulgator i en rekke matvarer for \u00e5 forbedre tekstur og viskositet, for eksempel is.<\/li>\n\n\n\n<li><strong>Akvafaba: <\/strong>V\u00e6sken fra en boks med kikerter kan brukes som en erstatning for egg i mange oppskrifter, inkludert majones. Akvafaba har egenskaper som ligner p\u00e5 eggehviter n\u00e5r den piskes og kan bidra til \u00e5 emulgere olje og vann.<\/li>\n<\/ul>\n<\/div>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-fem-ting-som-er-fint-a-vite-for-man-skal-lage-majones\">Fem ting som er fint \u00e5 vite f\u00f8r man skal lage majones<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-1-hvorfor-er-det-vann-i-majones\">1. Hvorfor er det vann i majones? <\/h4>\n\n\n\n<p>N\u00e5r man pisker inn oljen kommer man til et punkt hvor majonesen blir for tykk. Vannet er der for \u00e5 gj\u00f8re den tynnere. Det er jo ogs\u00e5 noe vann der fra f\u00f8r av, i form av eggeplomme, sennep og syre.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-2-hvilke-oljer-passer-til-a-lage-majones-og-hvorfor\">2. Hvilke oljer passer til \u00e5 lage majones og hvorfor?<\/h4>\n\n\n\n<p>Smaksn\u00f8ytrale oljer passer best. Eksempler p\u00e5 slike oljer er:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Solsikkeolje<\/li>\n\n\n\n<li>Rapsolje<\/li>\n\n\n\n<li>Soyaolje<\/li>\n<\/ul>\n\n\n\n<p>Man kan bruke oljer med mye smak, som olivenolje, men det kan fort bli litt mye. Et annet problem med olivenolje er at den ofte stivner i kj\u00f8leskap. Det kan v\u00e6re med p\u00e5 \u00e5 \u00f8delegge emulsjonen, og majonesen kan oppleves kornete hvis den er kj\u00f8leskapskald.<br>Om man \u00f8nsker \u00e5 bruke olivenolje b\u00f8r den utgj\u00f8re maks 20% av oljemengden.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-3-hvorfor-tilsetter-man-sennep-og-sitron-eller-hvitvinseddik\">3. Hvorfor tilsetter man sennep og sitron eller hvitvinseddik?<\/h4>\n\n\n\n<p>Majones inneholder en del fett. Syren fra sitron eller hvitvinseddik hjelper til \u00e5 \u00abutligne\u00bb dette. I tillegg hjelper syren og sennepen deg med \u00e5 sikre emulsjonen i starten av piskingen. Sennep er ekstra bra, da sennep har en del lecitin selv.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-4-kan-man-redde-en-majones-som-har-skilt-seg\">4. Kan man redde en majones som har skilt seg? <\/h4>\n\n\n\n<p>Ja! Ren beholder, ny eggeplomme, start piskingen med olje. N\u00e5r du har f\u00e5tt emulsjonen i gang, fortsetter du \u00e5 spe med den sprekte majonesen. Du kan ogs\u00e5 fors\u00f8ke \u00e5 redde den inn med en liten skvett iskaldt vann, men det er vanskelig.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\" id=\"h-5-hvor-lenge-holder-hjemmelaget-majones-i-kjoleskapet\">5. Hvor lenge holder hjemmelaget majones i kj\u00f8leskapet? <\/h4>\n\n\n\n<p>Hvis du har v\u00e6rt veldig n\u00f8ye med hygiene skal en majones i prinsippet holde seg i flere uker. Hver gruppe skal lage hjemmelaget majones og potetb\u00e5ter.<\/p>\n\n\n\n<p>Til slutt f\u00e5r elevene tilsette ulike smaker i majonesen, som chili, basilikum, lime og koriander.
