Metoden g\u00e5r ut p\u00e5 \u00e5 lage en jevning av mel og v\u00e6ske som varmes opp til 65 grader. Da b\u00f8r du pr\u00f8ve \u00e5 bake med tangzhong-metoden. Selv om navnet er komplisert er metoden overraskende enkel \u00e5 bruke.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-okt-vaeskemengde\">\u00d8kt v\u00e6skemengde<\/h2>\n\n\n\n<p class=\"has-text-align-left\">Teknikken g\u00e5r ut p\u00e5 \u00e5 lage en jevning av en del mel og fem deler v\u00e6ske (m\u00e5lt i vekt) som varmes opp til 65 grader. V\u00e6sken kan v\u00e6re vann eller melk, eller en blanding av begge. Dette gj\u00f8r at stivelsen i melet gelatiniserer, og deigen klarer p\u00e5 denne m\u00e5ten \u00e5 ta opp mer v\u00e6ske. Faktisk kan teknikken \u00f8ke v\u00e6skemengden i deigen til hele 75 prosent. Det er viktig at jevningen ikke koker, s\u00e5 bruk gjerne et termometer for \u00e5 f\u00f8lge med temperaturen underveis.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ta-en-test\">Ta en test<\/h2>\n\n\n\n<p class=\"has-text-align-left\">Jevningen skal s\u00e5 avkj\u00f8les i romtemperatur f\u00f8r du blander den med de \u00f8vrige ingrediensene i oppskriften. Det \u00f8kte v\u00e6skeforholdet gj\u00f8r at deigen kan oppleves som klissete, men ikke v\u00e6r fristet til \u00e5 tilsette mer mel. Eltes deigen lenge nok, vil den klare \u00e5 ta til seg all fuktigheten. Er du usikker p\u00e5 om den deigen er ferdig eltet kan du ta glutentesten: Dra ut litt deig mellom fingrene og n\u00e5r du f\u00e5r en tynn hinne som ikke sprekker, er deigen eltet ferdig. Dersom deigen virker \u00abkort\u00bb og den sprekker n\u00e5r du drar i den, elt videre i 5 minutter til.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-saftig-i-dagevis\">Saftig i dagevis<\/h2>\n\n\n\n<p class=\"has-text-align-left\">Metoden kan brukes i alle bakeoppskrifter med gj\u00e6r, men egner seg best til bakverk som ikke skal ha spr\u00f8 skorpe ettersom baksten blir mykere og luftigere enn vanlig. Et annet fint resultat av \u00e5 bake med tangzhong er at baksten holder seg saftig i flere dager.
