Mengden glutenproteiner i hveten og sammensetningen av disse s\u00f8rger nemlig for at baksten stort sett alltid blir b\u00e5de luftig og saftig n\u00e5r du baker med hvetemel.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Siktet hvetemel brukes blant annet til \u00e5 lage fin gj\u00e6rbakst, pizza og kaker.<\/p>\n\n\n\n<p class=\"has-text-align-left\">&nbsp;<\/p>\n\n\n\n<p class=\"has-text-align-left\"><em><a href=\"https:\/\/mills.no\/melange\/?post_type=post&amp;p=1396\">Hever ikke deigen som den skal? Da brukes hele kornet \u2013 b\u00e5de skall og kjerne. N\u00e5r du baker med sammalt hvetemel krever det litt mer forarbeid.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Det grove melet har d\u00e5rligere bakeegenskaper enn det fine. Det gj\u00f8r baksten tyngre og da blir det mer tidkrevende for gj\u00e6ren \u00e5 l\u00f8fte opp baksten. Derfor b\u00f8r det grove melet alltid bl\u00f8tlegges f\u00f8rst, forklarer Brekke.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Ha alt melet i oppskriften sammen med v\u00e6sken i en bolle og la det st\u00e5 i 25-30 minutter for bl\u00f8tlegging, f\u00f8r du tilsetter resten av ingrediensene og lager deig som normalt.<\/p>\n\n\n\n<p class=\"has-text-align-left\">&nbsp;<\/p>\n\n\n\n<p class=\"has-text-align-left\"><a href=\"https:\/\/mills.no\/melange\/?post_type=post&amp;p=1467\"><em>Skal du bake med grovt mel? Har du en oppskrift med siktet eller sammalt hvetemel, kan du erstatte dette med siktet eller sammalt speltmel b\u00e5de til gj\u00e6rbakst og kaker. Speltmelet inneholder mer gluten enn hvetemelet, men gluteinproteinet er svakere i spelt.<\/p>\n\n\n\n<p class=\"has-text-align-left\">For \u00e5 lykkes med baksten n\u00e5r du bruker speltmel, m\u00e5 du derfor elte deigen kortere enn n\u00e5r du bruker hvetemel. Alt fra brytebr\u00f8d til helkornbr\u00f8d og langpannebr\u00f8d. Rug inneholder mindre gluten enn hvetemel, og vil gi mer kompakt bakst. Rug har ogs\u00e5 mye egensmak, s\u00e5 jo mer rug du bruker, jo mer distinkt rugsmak vil det bli p\u00e5 sluttresultatet. Bruker du mer enn 30 % rug b\u00f8r du tilsette en kork eddik i deigen. Dette vil senke pH-verdien i deigen slik at melet binder mer vann og ikke blir s\u00e5 klissete etter steking.<\/p>\n\n\n\n<p class=\"has-text-align-left\">&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-havre\">Havre<\/h2>\n\n\n\n<p class=\"has-text-align-left\">&nbsp;<\/p>\n\n\n\n<p class=\"has-text-align-left\">Havre brukes b\u00e5de til gj\u00e6rbakst og til sm\u00e5bakst som muffins og havreflarn. Havre har i likhet med rug mye egensmak, og gir en nydelig n\u00f8tteaktig smak p\u00e5 baksten. Havre er dessuten naturlig fri for gluten, s\u00e5 for \u00e5 f\u00e5 et luftig resultat er havren avhengig av andre kornsorter for \u00e5 heve. Bruker du kun havre vil du f\u00e5 et kompakt sluttresultat.<\/p>\n\n\n\n<p class=\"has-text-align-left\">&nbsp;<\/p>\n\n\n\n<p class=\"has-text-align-left\"><a href=\"https:\/\/mills.no\/oppskrift\/melange\/glutenfrie-havrekjeks\/\"><em>Lyst p\u00e5 noe s\u00f8tt til kaffen? N\u00e5r du baker med bygg, vil du derfor kunne oppleve at baksten ikke hever seg like godt som n\u00e5r du bruker kun hvetemel.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Bruker du mer enn 15% bygg, kan det gi br\u00f8det bitter smak, og med mer bygg i deigen vil du f\u00e5 bakst som er mindre luftig og mer kompakt enn fin bakst, forteller bakemesteren.<\/p>\n\n\n\n<p class=\"has-text-align-left\">&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-hele-korn\">Hele korn<\/h2>\n\n\n\n<p class=\"has-text-align-left\">&nbsp;<\/p>\n\n\n\n<p class=\"has-text-align-left\">Hele korn brukes der en \u00f8nsker st\u00f8rre andel hele korn i baksten, for eksempel helkornbr\u00f8d, og skal alltid bl\u00f8tlegges. Brekkes tips er \u00e5 bl\u00f8tlegge kornene i en bolle med vann, sammen med saltet du skal bruke i deigen. Saltet p\u00e5virker ytterskallet p\u00e5 kornet slik at vannet trekker lettere inn.
