Stadig flere oppdager gleden ved \u00e5 dyrke sin egen surdeigskultur og bake surdeigsbr\u00f8d, -boller og -rundstykker. Det kan h\u00f8res komplisert ut, men det eneste du trenger for \u00e5 komme i gang er faktisk mel, vann og litt t\u00e5lmodighet.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Gerhard Sletten er mannen bak bloggen surdeig.no og app-en Surdeig, og en av mange som har lagt sin elsk p\u00e5 surdeig. Han oppdaget surdeigens gleder etter at han kom over en bok om temaet for 15 \u00e5r siden.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Jeg er generelt matinteressert, og tenkte at det kunne v\u00e6re morsomt \u00e5 pr\u00f8ve meg p\u00e5 surdeigsbr\u00f8d. Hvis du kjenner noen som allerede baker sine egne surdeigsbr\u00f8d kan du sp\u00f8rre om \u00e5 f\u00e5 en liten avlegger av deres surdeigskultur, eller du kan kj\u00f8pe en starter hos utvalgte bakere eller p\u00e5 matbutikken. Du kan ogs\u00e5 lage din egen starter, slik Gerhard Sletten gjorde.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Du trenger bare \u00e5 blande grovt mel, vann og salt, og la blandingen st\u00e5 i romtemperatur noen dager. Da v\u00e5kner bakteriene i melet til liv og det begynner \u00e5 boble. Mellom bakingene oppbevares den i kj\u00f8leskap s\u00e5 prosessen g\u00e5r saktere, sier han.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Det er melkesyrebakteriene og gj\u00e6rsoppen som finnes naturlig i kornets skall som gj\u00f8r surdeigen <strong>\u00ab<\/strong>levende\u00bb.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Gj\u00e6rsopp og melkesyrebakterier finnes overalt i naturen. I vin er det gj\u00e6rsoppen p\u00e5 druenskallet som omdanner druesukkeret til alkohol. I gamle dager i Norge oppdaget man at hvis man gned inn melkespannet med gress fra myrer ble det dannet en spesiell type surmelk kalt tjukkmelk eller tettmelk, forteller Sletten.<\/p>\n\n\n\n<p class=\"has-text-align-left\">N\u00e5r man skal bake surdeigsbr\u00f8d tar man bare av en bit av kulturen og blander med mel og vann til en deig.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"1024\" src=\"https:\/\/mills.no\/content\/uploads\/sites\/3\/2022\/01\/SurdeigsbrC3B8d-1024x1024.jpg\" alt=\"Surdeigsbr\u00f8d. Mens industrigj\u00e6r bare best\u00e5r av \u00e9n type gj\u00e6rsopp, inneholder surdeig mange forskjellige. Surdeigen bryter ned glutenproteinet i hvetemel, og det dannes ulike enzymer (\u00aben zyme\u00bb betyr faktisk \u00abi surdeig\u00bb p\u00e5 gresk). Disse enzymene gj\u00f8r at kroppen tar opp mer n\u00e6ringsstoffer som vitaminer og mineraler fra det ferdige resultatet.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Surdeigsbr\u00f8d er gode, sunne, billige, og enkle og morsomme \u00e5 bake, oppsummerer Gerhard Sletten.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-fakta-om-surdeig\">Fakta om surdeig:<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Surdeig er ikke noe nytt. F\u00f8r vi hadde fersk gj\u00e6r, ble deigen hevet med en surdeigstarter. Dette er sannsynligvis den eldste m\u00e5ten \u00e5 heve br\u00f8d p\u00e5.<\/li><li>En surdeig kan leve i flere \u00e5r hvis den blir tatt godt vare p\u00e5, og det sies at gode kulturer ble overf\u00f8rt gjennom generasjoner.<\/li><li>Surdeig hever br\u00f8d ved hjelp av melkesyrebakterier.
