Det gj\u00f8r det tyngre og mer tidkrevende for gj\u00e6ren \u00e5 l\u00f8fte opp baksten. Mange l\u00f8ser dette ved \u00e5 tilsette mer gj\u00e6r, men da ender du gjerne opp med altfor mye gj\u00e6rsmak p\u00e5 deigen. Den beste m\u00e5ten \u00e5 l\u00f8se det p\u00e5 er derfor ved \u00e5 bruke fordeig, forteller Brekke og legger til sitt andre beste r\u00e5d:<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Du b\u00f8r ogs\u00e5 bl\u00f8tlegge det grove melet f\u00f8r du baker, for p\u00e5 innsiden av de grove skallpartiklene ligger det melrester som m\u00e5 frigj\u00f8res for at glutennettverket skal utvikle seg. Dette er essensielt for at baksten skal bli s\u00e5 luftig som mulig. Bl\u00f8tleggingen gir ogs\u00e5 mykere korn og bedre tyggemotstand, samt at det hindrer at grove partikler og hele korn \u00abstjeler\u00bb vann fra deigen under f\u00f8rste heving.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Her f\u00e5r du bakernes komplette guide til \u00e5 lykkes med grov bakst:<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-slik-lykkes-du-med-grov-bakst-steg-for-steg\">Slik lykkes du med grov bakst \u2013 steg for steg<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-bruk-fordeig\"><strong>Bruk fordeig<\/strong><\/h3>\n\n\n\n<p class=\"has-text-align-left\">Grovt mel er tyngre og mer tidkrevende \u00e5 l\u00f8fte opp for gj\u00e6ren. Ved \u00e5 bruke en fordeig f\u00e5r du igangsatt gj\u00e6ren, noe som vil gi mer luftig grovbakst.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Fordeig lager du ved \u00e5 blande sammen 100 gram vann, 100 gram mel og 10 gram fersk gj\u00e6r (dette tilsvarer 2 gram t\u00f8rrgj\u00e6r). Elt det sammen, enten for h\u00e5nd eller i maskin, og la det st\u00e5 i 1-24 timer f\u00f8r du baker. Tilsett fordeigen i din vanlige deig etter at den er ferdigeltet.<\/p>\n\n\n\n<p class=\"has-text-align-left\">N\u00e5r du skal lage fordeig til grovbr\u00f8d kan du bruke av ingrediensene til resten av deigen. S\u00e5 hvis oppskriften sier 1 kg mel, tar du 100 gram til fordeigen og de resterende 900 til hoveddeigen. Velg gjerne fint eller grovt sammalt mel n\u00e5r du skal r\u00f8re sammen fordeigen.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-blotlegging\"><strong>Bl\u00f8tlegging<\/strong><\/h3>\n\n\n\n<p class=\"has-text-align-left\">Grovt mel b\u00f8r alltid bl\u00f8tlegges f\u00f8r baking.<br> Ha alt melet i oppskriften sammen med v\u00e6sken i en bolle og la det st\u00e5 i 25-30 minutter for bl\u00f8tlegging, f\u00f8r du tilsetter resten av ingrediensene og lager deig som normalt. Hele korn kan gjerne bl\u00f8tlegges over natten.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-elt-deigen-godt-og-riktig\"><strong>Elt deigen godt \u00ad\u2013 og riktig<\/strong><\/h3>\n\n\n\n<p class=\"has-text-align-left\">Den grove deigen b\u00f8r eltes i 10 minutter i kj\u00f8kkenmaskin eller i 15 minutter for h\u00e5nd. Bruk alltid lav hastighet p\u00e5 kj\u00f8kkenmaskinen for \u00e5 unng\u00e5 at deigen blir for varm. Derfor er det lurt \u00e5 holde igjen noe av v\u00e6skemengden til slutten av eltingen. Blir det for mye vann, vil man m\u00e5tte justere med mer mel, noe som kan gi en underutviklet deig ettersom gluten- og enzymprosessen ikke er tilstrekkelig igangsatt.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-hviletid-og-heving\"><strong>Hviletid og heving<\/strong><\/h3>\n\n\n\n<p class=\"has-text-align-left\">F\u00f8rste heving, eller hviletid, er viktig. La deigen ligge under plast i bollen i 30-60 minutter. Under hevingen utvikles konsistens og smak, og gj\u00e6ren formerer seg slik at br\u00f8det blir lettere og mer luftig. Uten heving kan resultatet bli et tett og kompakt br\u00f8d.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Etter f\u00f8rste heving deles deigen opp i \u00f8nskede emner. Bruk gjerne en vekt for \u00e5 f\u00e5 samme st\u00f8rrelsene p\u00e5 emnene. Stor forskjell i vekt\/st\u00f8rrelse gir ulik steketid, slik at sluttresultatet kan bli ujevnt.<\/p>\n\n\n\n<p class=\"has-text-align-left\">La deigen hvile under et kj\u00f8kkenh\u00e5ndkle i 15 minutter, slik at den f\u00e5r riktig elastisitet f\u00f8r den formes til br\u00f8d. Best resultat blir det hvis den avkj\u00f8les p\u00e5 rist. Baker du br\u00f8d i form, m\u00e5 br\u00f8det ut av formen med en gang slik at du f\u00e5r ut fukten. Dette er viktig b\u00e5de for konsistens, holdbarhet og smak.
