Heldigvis er det i dag et stort fokus p\u00e5 milj\u00f8 og matsvinn i Norge. \u00d8kologiske r\u00e5varer selger mer og mer, kortreist og sunn mat prioriteres av mange, og vi blir stadig flinkere til \u00e5 kaste mindre. For \u00e5 bli enda flinkere trenger vi mer kunnskap om emnet, men ogs\u00e5 motivasjon, sier Sara D\u00f8scher, som sammen med ektemannen Klaus D\u00f8scher har skrevet boka \u00abRestekj\u00e6rlighet\u00bb. Familie, venner og naboer kommer og g\u00e5r, og m\u00e5tidet \u2013 s\u00e6rlig middagen \u2013 er et uformelt og sosialt h\u00f8ydepunkt p\u00e5 dagen. V\u00e5rt hjem i Rio var bestandig fullt av sultne gjester, og vi lagde alltid mye mat. Av slikt blir det rester. Kombinasjonen varmt klima og et bittelite kj\u00f8leskap gjorde det vanskelig for oss \u00e5 ta vare p\u00e5 alle disse restene, forteller hun.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Med fattigdom rett utenfor d\u00f8ren var det \u00e5 kaste mat ikke en behagelig l\u00f8sning. Paret bestemte seg for \u00e5 kj\u00f8pe en bok om restemat, men noe slikt fantes ikke. L\u00f8sningen ble \u00e5 skrive den selv.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-restemat-gir-nye-matopplevelser\">Restemat gir nye matopplevelser<\/h2>\n\n\n\n<p class=\"has-text-align-left\">Med \u00abRestekj\u00e6rlighet\u00bb \u00f8nsker Sara og Klaus D\u00f8scher \u00e5 motivere og inspirere til \u00e5 gjenskape restene fra i g\u00e5r til noe nytt og velsmakende i dag.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Forvandlingens enkle kunst liker jeg \u00e5 kalle det, for dette handler ikke om \u00e5 varme opp g\u00e5rsdagens middag, men \u00e5 trylle restene om til en helt ny rett, sier Sara, som lever og \u00e5nder for mat og drikke. Hun har en bachelor i restaurant- og m\u00e5ltidskunnskap, og har hele sitt voksne liv jobbet med mat og drikke. Ektemannen Klaus er advokat og en lidenskapelig hobbykokk.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 \u00c5 bruke opp rester er utelukkende en vinn-vinn-situasjon: I tillegg til \u00e5 sl\u00e5 et slag for milj\u00f8 og b\u00e6rekraft, er det ogs\u00e5 en stor \u00f8konomisk fordel i det \u00e5 spise opp mat vi har brukt penger p\u00e5 \u00e5 handle inn. P\u00e5 toppen av dette nyter du godt av mange gode matopplevelser som du ellers ville g\u00e5tt glipp av, sier hun.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Sara er ikke i tvil om hva som er hennes beste restematopplevelse:<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Sen frokost 1. juledag. Kald r\u00f8dk\u00e5l og ribberester fra julemiddagen p\u00e5 ferskt br\u00f8d. Let heller etter varer som n\u00e6rmer seg utl\u00f8psdato. Fersk mozzarella, laks, biff, karbonade, gresk yoghurt eller gr\u00f8nnsaker \u2013 de fleste butikker setter ned prisen p\u00e5 varer som n\u00e6rmer seg utl\u00f8psdato. La deg inspirere av disse varene \u2013 de er fortsatt i tipp topp stand, men koster gjerne halvparten. Her er det mye penger \u00e5 spare, i tillegg til at dette bidrar til en viktig og riktig flyt n\u00e5r det gjelder varep\u00e5fyll i butikkene, sier Sara.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Et annet godt tips er \u00e5 innf\u00f8re en fast restedag hjemme.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Torsdag er en fin dag: Gjennom \u00e5 bruke opp restemat fra uken som har g\u00e5tt frigj\u00f8r du plass i kj\u00f8leskapet og gj\u00f8r klart til helg og nye innkj\u00f8p. Du forgyller selv en trist taco-rest med egg og ost i stekepannen.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Dette er et supert eksempel p\u00e5 hva jeg mener med \u00abforvandlingens enkle kunst\u00bb. Poenget er jo ikke at du skal spise den samme maten dagen derp\u00e5, men forvandle den til noe nytt.
