Melange er supert \u00e5 steke fisk i fordi fargen indikerer hvilken temperatur fettstoffet holder. N\u00e5r fargen p\u00e5 Melange er lys gyllenbrun, holder pannen 160 grader og fisken kan legges i panna, forklarer Erik.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Melange spruter dessuten langt mindre enn sm\u00f8r og olje, s\u00e5 du slipper ekstra rengj\u00f8ring og \u00e5 beskytte deg mot stekesprut.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Selv om all fisk b\u00f8r stekes p\u00e5 160 grader, er det ulike m\u00e5ter \u00e5 h\u00e5ndtere de forskjellige fiskeslagene p\u00e5 n\u00e5r de ligger i panna, sier Erik og viser frem to gjengangere p\u00e5 norske middagstallerkener: torsk og laks.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-stek-mager-fisk-pa-en-side\">Stek mager fisk p\u00e5 \u00e9n side<\/h2>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Torsken er et magert fiskeslag som har en l\u00f8sere kj\u00f8ttstruktur enn laks. Derfor er det lurt \u00e5 steke torsken bare p\u00e5 den ene siden. Har torsken skinn, s\u00e5 legger du skinnsiden ned. Om torsken ikke har skinn, s\u00e5 velger du en side som f\u00e5r ligge i pannen hele steketiden, sier Erik og veileder oss gjennom stekeprosessen.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Mens torsken steker p\u00e5 en side, \u00f8ser jeg over den varme margarinen. Slik f\u00e5r det fine torskekj\u00f8ttet sk\u00e5nsom varme underveis. Da f\u00e5r du en knallgod stekeskorpe med mye god smak, og unng\u00e5r en fisk som detter fra hverandre n\u00e5r den skal ut av pannen, forteller Erik.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Hvor lenge fisken m\u00e5 steke kommer an p\u00e5 tykkelsen, men if\u00f8lge Erik burde rundt 4 minutter holde.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-stek-laks-pa-begge-sider\">Stek laks p\u00e5 begge sider<\/h2>\n\n\n\n<p class=\"has-text-align-left\">Med familiefavoritten laks, stiller det seg derimot annerledes. Den fete fisken har en tettere og mer robust struktur, s\u00e5 her kan man steke p\u00e5 begge sider uten problem.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Men v\u00e6r litt varsom med stekingen likevel, r\u00e5der Erik.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Laksen b\u00f8r ikke stekes for hardt og for lenge. Laksen b\u00f8r ha en r\u00e5 og m\u00f8rkrosa kjerne p\u00e5 et par millimeter, det gir et mer saftig og smakfullt resultat. Steker du fisken for hardt, s\u00e6rlig fete fiskeslag, f\u00e5r du en veldig kraftig fiskesmak. Det er kanskje noe \u00e5 tenke p\u00e5 hvis man har barn ved middagsbordet. Jeg pleier ellers \u00e5 si at de som liker medium stekt biff, de liker ogs\u00e5 medium stekt laks, sier Erik avslutningsvis.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Kokkens siste tips er \u00e5 la fisken hvile et par minutter f\u00f8r den serveres.
