Rundt 30 minutter p\u00e5 kj\u00f8kkenbenken pleier \u00e5 v\u00e6re tilstrekkelig for vanlige biffer p\u00e5 2 til 4 centimeter.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Da er biffene blitt akklimatiserte f\u00f8r de skal f\u00e5 sjokk i en gloheit panne. Kj\u00f8ttet er en muskel som er full av v\u00e6ske, og denne v\u00e6sken liker ikke varme. Da vil den pr\u00f8ve \u00e5 stikke av, forteller han mens han tegner et bilde for oss:<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Se for deg en stor gjeng med perler av v\u00e6ske. Disse bor i biffen og det er disse som gj\u00f8r den saftig, men de hater varme. N\u00e5r biffen treffer stekepannen, vil disse perlene f\u00e5 panikk og pr\u00f8ve \u00e5 slippe ut. Det er derfor de begynner \u00e5 piple opp p\u00e5 oversiden av biffen n\u00e5r den n\u00e5r en viss temperatur. Da er det p\u00e5 tide \u00e5 snu kj\u00f8ttstykket s\u00e5nn perlene l\u00f8per mot midten igjen, vekk fra varmen og tilbake i biffen, forklarer Erik.<\/p>\n\n\n\n<p class=\"has-text-align-left\">T\u00f8rk de r\u00e5 biffene med kj\u00f8kkenpapir og str\u00f8 over salt og pepper like f\u00f8r de skal i stekepannen. Du kan gjerne ha hvitl\u00f8ksfedd og noen robuste urter som timian eller rosmarin i stekepannen sammen med kj\u00f8ttet. Fordelen med \u00e5 steke i Melange, er at de faste stoffene i margarinen faller mot bunnen av stekepannen og skifter farge n\u00e5r temperaturen stiger, s\u00e5nn at du kan se n\u00e5r temperaturen er riktig. N\u00e5r margarinen er n\u00f8ttebrun holder den 180 grader og er klar for kj\u00f8ttet, forteller Erik f\u00f8r han avkrefter en myte.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Mange tror at stekeskorpen er viktig for \u00e5 holde kj\u00f8ttsaftene p\u00e5 plass, men kokken kan fortelle at det ikke stemmer helt.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 M\u00e5let med stekeskorpen er f\u00f8rst og fremst \u00e5 gi god smak. Her snakker vi om skikkelig umami! Stekeskorpen p\u00e5 kj\u00f8tt har mye av den femte smaken som vi mennesker er helt tussete etter, sier han begeistret.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-biffen-hvile-etter-den-er-stekt\">La biffen hvile etter den er stekt<\/h2>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Til slutt er det viktig at biffene f\u00e5r hvile n\u00e5r de er ferdigstekt. Igjen, her handler det om \u00e5 ikke la de redde sm\u00e5 perlene med deilig kj\u00f8ttsaft f\u00e5 stikke av. N\u00e5r biffen er nystekt, ligger perlene like under overflaten og venter p\u00e5 \u00e5 f\u00e5 slippe ut. Skj\u00e6rer du av en bit da, renner de ned p\u00e5 tallerkenen og g\u00e5r tapt.
