Den skal ikke v\u00e6re rennende, ikke ligne p\u00e5 risgr\u00f8t og riskornene skal ikke klumpe seg sammen p\u00e5 tallerkenen eller gaffelen, sier Kristian Lambrechts, kj\u00f8kkensjef p\u00e5 Trattoria Popolare, en av Oslos beste italienske restauranter.<\/p>\n\n\n<h2 class=\"wp-block-heading\" >Hemmeligheten ligger i risen<\/h2>\n\n\n<p style=\"text-align:left;\">Han forteller at hemmeligheten ligger i risen, for du kan ikke bruke all slags ris til \u00e5 lage risotto.<\/p>\n\n\n<p style=\"text-align:left;\">\u2013 Det mest vanlige er \u00e5 bruke Carnaroli-ris, denne finner du i n\u00e6rmest alle dagligvareforretninger. Du kan ogs\u00e5 bruke Arborio-ris. Om du \u00f8nsker \u00e5 lage den beste risottoen, anbefaler jeg \u00e5 ta en tur p\u00e5 en spesialforretning og sp\u00f8rre etter en ristype som heter Vialone Nano. Dette er min favoritt og den risen vi bruker p\u00e5 Trattoria Popolare. I nord bruker de mye sm\u00f8r og mascarpone i risottoen, mens de i s\u00f8r bruker olivenolje og parmesan, forklarer Lambrechts.<\/p>\n\n\n<p style=\"text-align:left;\">Det mest vanlige er \u00e5 lage risottoen med kyllingkraft, men det er ingen begrensning p\u00e5 hva slags kraft du kan bruke. Det kan du selv avgj\u00f8re alt etter hva slags smak du \u00f8nsker p\u00e5 risottoen.<\/p>\n\n\n<p style=\"text-align:left;\"><strong>\u2013 Du kan lage risotto med kyllingkraft, skalldyrkraft, fiskekraft eller andre smaker. Du kan ogs\u00e5 tilsette smaker i risottoen, som for eksempel sopp, sier han.<\/strong><\/p>\n\n\n<p style=\"text-align:left;\">Andre r\u00e5varer du kan tilsette i risottoen er for eksempel reker og andre skalldyr, spinat, erter, bacon og kylling.
