Da sitter gjerne storfamilien samlet fra klokken ti p\u00e5 kvelden til ett p\u00e5 natten. Kj\u00f8kkenet er desidert det viktigste stedet i hjemmet og n\u00e5r kvelden kommer nyter man maten og virkelig koser seg, forteller Mastorakis.<\/strong><\/p>\n\n\n\n<p class=\"has-text-align-left\">For n\u00e5r det kommer til meze, handler det om \u00e5 dele maten som lages med enkle ingredienser og stor kj\u00e6rlighet. Smakene som dominerer er fra urter som oregano, timian, salvie, mynte og rosmarin. Maten kokes ofte i r\u00f8dvin og r\u00f8dvinseddik, og krydres som regel med nellik, spisskummen og kanel.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Mastorakis forteller at det er ingen regler for hva som kan serveres p\u00e5 meze-bordet.<\/p>\n\n\n\n<p class=\"has-text-align-left\">\u2013 Noen tradisjonsrike retter er gjengangere, men ellers er det tilgjengeligheten av r\u00e5varer som bestemmer hva som serveres. Det er viktig at spinaten er t\u00f8rr n\u00e5r du har den i pannen. Er den v\u00e5t, blir blandingen vannete.<\/li><li>La alt surre til spinaten har falt sammen. La blandingen avkj\u00f8le litt.<\/li><li>Smuldre fetaost i blandingen og r\u00f8r inn eggene. Tilsett et par klyper salt og pepper etter \u00f8nske, men husk at fetaosten er salt i seg selv, s\u00e5 det er lurt \u00e5 unng\u00e5 \u00e5 salte for mye.<\/li><li>Legg det f\u00f8rste arket med filodeig i en smurt ildfast form p\u00e5 cirka 26 x 20 centimeter. Du trenger cirka 7 til 8 ark med filodeig b\u00e5de over og under paifyllet. Det er viktig \u00e5 pensle godt med Olivero eller olivenolje mellom hvert filoark, ellers blir ikke paien ordentlig spr\u00f8.<\/li><li>N\u00e5r det siste laget med filodeig er lagt p\u00e5, kan du pensle over en siste gang og str\u00f8 p\u00e5 sesamfr\u00f8.
