Maten tilberedes med olivenolje istedenfor sm\u00f8r, og r\u00f8dt kj\u00f8tt og fete meieriprodukter spises sjelden. \u2013 Unders\u00f8kelser viser at middelhavskostholdet kan forebygge hjerte- og karsykdommer (1). Personer med h\u00f8yt blodtrykk eller h\u00f8yt kolesterol har derfor god gevinst av \u00e5 legge om til et middelhavskosthold. Middelhavskostholdet er relativt fettrikt, men best\u00e5r av det \u00abgode\u00bb, umettede fettet fra fisk, olje og n\u00f8tter.<\/p>\n\n\n<p style=\"text-align:left;\">\u2013 Olivenolje er essensielt i middelhavskostholdet, og den inneholder oljesyre, en omega-9-fettsyre som er bra for hjertehelsen. Fisk inneholder omega-3-fettsyrene EPA og DHA, mens fra n\u00f8tter kommer vegetabilske omega-3-fettsyrer. Alle disse er \u00abgode\u00bb fettsyrer som virker betennelsesdempende og beskytter mot hjertesykdom, sier Tokheim.<\/p>\n\n\n<p style=\"text-align:left;\">Verden fikk for alvor opp \u00f8ynene for middelhavskostholdet etter at resultatene fra den s\u00e5kalte \u00abSeven countries study\u00bb (2) ble publisert i 1978. Dette var den f\u00f8rste studien som systematisk beskrev sammenhengen mellom livsstil, kosthold og hjertesykdom. Den s\u00e5kalte H-70-studien (3) utf\u00f8rt ved Sahlgrenska akademin i Sverige unders\u00f8kte helsegevinsten ved middelhavskosthold blant mer enn tusen 70-\u00e5ringer som spiste middelhavskost sammenlignet med jevnaldrende som spiste mer animalsk mat.
