Denne oppskriften har vi f\u00e5tt fra den italienske kokken Luca Mereu. Han kan fortelle at ravioli lages over hele Italia, gjerne med sm\u00e5 regionale forskjeller. Luca bruker tipo 00 hvetemel og durumhvete i pastaen sin. Det bidrar til at pastadeigen blir fastere, holder bedre p\u00e5 v\u00e6ske og at den blir mindre klebrig etter koking. Du kan bruke vanlig finmalt hvetemel, eller bare en av de to ovennevnte meltypene, om du \u00f8nsker det. De deilige pastaputene kan lages b\u00e5de med og uten pastamaskin.
