Det er for eksempel rundt 160 grader at man steker kylling, fisk og gr\u00f8nnsaker, forteller ern\u00e6ringsfysiologen.<\/p>\n\n<p style=\"text-align:left;\">\u2013 Felles for raffinerte olje er at de er har lite smak og t\u00e5ler oppvarming. Rapsolje skiller seg ut ved at den i tillegg er spesielt rik p\u00e5 det gunstige umettede fettet. Raps inneholder kun 7 % mettet fett, mens solsikke, mais, soja og olivenolje ligger mellom 12- 16% mettet fett. Om du bytter ut 1 dl margarin med 1 dl olje vil du dermed f\u00e5 mer fett i deigen. Ofte kan det v\u00e6re greit \u00e5 f\u00f8lge det som er oppgitt i ingredienslisten, men om du vil fors\u00f8ke \u00e5 bytte ut sm\u00f8r eller margarin med olje b\u00f8r du fors\u00f8ke med litt mindre mengde enn det som er oppgitt.<\/p>\n\n<h2 class=\"wp-block-heading\" >Hvorfor spruter det n\u00e5r man steker?<\/h2>\n\n<p style=\"text-align:left;\"><strong>Matvarer som inneholder vann kombinert med olje med h\u00f8y temperatur kan gj\u00f8re at det spruter. <\/strong><\/p>\n\n<p style=\"text-align:left;\">Olje kan fort bli veldig varme n\u00e5r de varmes opp i stekepannen fordi det er vanskelig \u00e5 se hvilken temperatur den har. Et triks er \u00e5 stikke en tresleiv i oljen. Bruser det rundt sleiva er pannen varm nok. Bruker man flytende margarin inneholder denne melk som blir brun n\u00e5r den blir varm. N\u00e5r dette skjer er det er klart til \u00e5 steke.<\/p>\n\n<h2 class=\"wp-block-heading\" >R\u00f8ykepunkt<\/h2>\n\n<p style=\"text-align:left;\">N\u00e5r oljen begynner \u00e5 ryke i stekepannen kalles temperaturen den ryker ved for r\u00f8ykpunkt. Herfra skjer nedbrytingen av oljen raskt og maten blir fort brent.<\/p>\n\n<p style=\"text-align:left;\">R\u00f8ykepunktet p\u00e5 de ulike oljene varierer, men raffinerte oljer som hovedregel har et h\u00f8yere r\u00f8ykepunkt enn uraffinerte. Derimot er de fine \u00e5 bruke i dressinger eller til \u00e5 dyppe br\u00f8d i.<\/p>\n\n<p style=\"text-align:left;\">Kaldpressing bevarer mer av fr\u00f8, frukt eller n\u00f8ttenes egenskaper som lukt og smak, men bevarer ogs\u00e5 stoffer som ofte ikke t\u00e5ler varme spesielt godt.<\/p>\n\n<p style=\"text-align:left;\">De vanligste uraffinerte oljene er ekstra virgin olivenolje, valn\u00f8ttolje, sesamolje og linfr\u00f8olje. Rapsolje er ogs\u00e5 mulig \u00e5 f\u00e5 som kaldpresset olje.<\/p>\n\n<p style=\"text-align:left;\">Skal du lage wok er det lurt \u00e5 starte med en raffinert olje som t\u00e5ler varme. \u00d8nsker du \u00e5 tilsette smaksoljer, som for eksempel sesamolje eller andre smaksoljer er det lurt \u00e5 gj\u00f8re det til slutt. Da bevarer du mer av den gode smaken.<\/p>\n\n<h2 class=\"wp-block-heading\" >Oppbevaring av oljer<\/h2>\n\n<p style=\"text-align:left;\">Matoljer holder seg best n\u00e5r de er skjermet for lys, luft og varme. Velg derfor helst oljer tappet p\u00e5 m\u00f8rke eller frostede flasker og s\u00f8rg for at korken skrus godt p\u00e5 etter bruk.<\/p>\n\n<p style=\"text-align:left;\">Oppvarmet olje b\u00f8r ikke brukes p\u00e5 nytt.<\/p>\n\n<p style=\"text-align:left;\">Er du usikker p\u00e5 om oljen du har i skapet kan brukes b\u00f8r du lukte p\u00e5 oljen. Harsk olje kan lukte litt som maling.<\/p>\n\n<p style=\"text-align:left;\">Vask alltid stekepannen etter at du har brukt den.
