Hun forteller at det sunneste valget n\u00e5r det kommer til meltype av korn, er \u00e5 velge mel av fullkorn.<\/p>\n\n\n<p style=\"text-align:left;\">\u2013 Fullkornsmel, ogs\u00e5 kalt sammalt mel, er mel der man bruker hele kornet \u2013 b\u00e5de skall, kime og kjerne.<\/p>\n\n\n<p style=\"text-align:left;\"><strong> Skallet er et fiberrikt ytre lag som beskytter fr\u00f8et, mens kjernen er den st\u00f8rste delen og best\u00e5r av stivelse og noe protein. Kimen er den delen av kornet som skal bli til en ny plante. Dette er den mest n\u00e6ringsrike og fettrike delen av kornet. <\/strong><\/p>\n\n\n<p style=\"text-align:left;\">\u2013 Det finnes fullkorn\/sammalt mel av hvete, rug, bygg, havre og spelt. Disse meltypene inneholder mer vitaminer og mineraler, er rike p\u00e5 fiber, bra for ford\u00f8yelsen, gir stabil blodsukkerstigning, metter godt og lenge, sier hun.<\/p>\n\n\n<p style=\"text-align:left;\">Mens noen av de nye melsortene som speltmel og havremel best\u00e5r av korn, finnes det n\u00e5 en rekke melsorter som er laget av andre r\u00e5varer. Blant disse er mel av mandler, kokos og kikerter. Alle med unike smaker og ulike egenskaper. B\u00e5de smaks-og en\u00e6ringsmessig er speltmelet ganske likt hvetemelet, med noe h\u00f8yere proteininnhold og litt mindre stivelse.<\/p>\n\n\n<p style=\"text-align:left;\">\u2013 Speltmelet inneholder mer gluten enn hvetemel, men glutenproteinet er svakere i speltmelet. Dette er muligens grunnen til at flere opplever at speltmel er lettere \u00e5 ford\u00f8ye, sier Lundekvam By.<\/p>\n\n\n<p style=\"text-align:left;\">Hun legger til at dersom du har oppskrifter som inneholder hvetemel, kan du erstatte hele melmengden med speltmel. Havren inneholder mer sunt fett en hvetemelet og gir en fin n\u00f8tteaktig smak p\u00e5 bakverket.<\/p>\n\n\n<p style=\"text-align:left;\">\u2013 Havre er en kornsort som skiller seg ut fra de andre p\u00e5 grunn av innholdet av sunne fettsyrer og fiberet betaglukan. Betaglukan er spesielt bra for hjertet ditt da det kan bidra til \u00e5 opprettholde normale kolesterolverdier. Det er ogs\u00e5 er bra for ford\u00f8yelsen. Havren er naturlig glutenfri som gj\u00f8r melet vanskelig \u00e5 bake med dersom du vil ha luftig bakst. Mandelmelet innholder dobbelt s\u00e5 mye proteiner som hvetemel og 53 gram fett per 100 gram, mens hvetemel inneholder 1,5 gram fett per 100 gram. Mandelmelet egner seg godt til \u00e5 lage glutenfrie kjeks men ikke til bakst som skal heve.<\/p>\n\n\n<p style=\"text-align:left;\">\u2013 Mandelmel har d\u00e5rlige bakeegenskaper og vil ikke gi luftige br\u00f8d eller kaker. Bruker man mel uten gluten er det vanskelig \u00e5 f\u00e5 luftig bakst, fordi gluten gj\u00f8r at bakst kan heve seg. Mandelmel er dessuten sv\u00e6rt energitett og vil gi et kaloririkt bakverk. Kikertmel har en aromatisk, litt n\u00f8tteaktig smak og kan blandes sammen med andre melsorter i bakverk, brukes som ingrediens i kikertpannekaker eller brukes som et glutenfritt bindemiddel i sauser og supper.
