Faktisk vil mange av de frosne gr\u00f8nnsakene inneholde mer n\u00e6ring enn de ferske. Frosne gr\u00f8nnsaker dampes og fryses ned umiddelbart etter innh\u00f8sting, noe som bidrar til \u00e5 bevare mest mulig av n\u00e6ringen. Dette gjelder spesielt erter og b\u00f8nner som ikke t\u00e5ler lagring og blir \u00f8delagt bare noen timer etter h\u00f8sting.<\/p>\n\n<p style=\"text-align:left;\">Noe bedre er det for blomk\u00e5l og brokkoli som kan lagres kj\u00f8lig i 2-3 uker. Om vinteren og v\u00e5ren m\u00e5 imidlertid disse gr\u00f8nnsakene importeres og fraktes langt, og dette g\u00e5r utover n\u00e6ringsinnholdet. Vil du ha mest mulig n\u00e6ring i blomk\u00e5len og brokkolien, vil det derfor v\u00e6re lurt \u00e5 velge frossent.<\/p>\n\n<h2 class=\"wp-block-heading\" >Sk\u00e5nsom varmebehandling<\/h2>\n\n<p style=\"text-align:left;\">Poteter, gulr\u00f8tter og k\u00e5lrot holder godt p\u00e5 n\u00e6ringsstoffene og kan holde seg ferske inntil ni m\u00e5neder etter h\u00f8sting. Du kan derfor finne norske poteter, gulr\u00f8tter og k\u00e5lr\u00f8tter i butikken \u00e5ret rundt.<\/p>\n\n<p style=\"text-align:left;\">For \u00e5 bevare mest mulig av n\u00e6ringen i gr\u00f8nnsakene er det viktig med sk\u00e5nsom varmebehandling. Noen fors\u00f8ker \u00e5 unng\u00e5 varmebehandling av gr\u00f8nnsaker for \u00e5 bevare n\u00e6ringen, men faktisk s\u00e5 er det en rekke gr\u00f8nnsaker som blir mer n\u00e6ringsrike ved \u00e5 varmebehandles. Gulr\u00f8tter, asparges, tomater, spinat og gresskar er noen av gr\u00f8nnsakene som blir mer n\u00e6ringsrike ved varmebehandling. Ved \u00e5 dampe gr\u00f8nnsakene kan du bevare dobbelt s\u00e5 mye av n\u00e6ringsstoffene enn ved koking. Dette skyldes at temperaturen ikke blir like h\u00f8y som ved steking og n\u00e6ringsstoffene lekker ikke ut som ved koking. Ved damping koker gr\u00f8nnsakene uten \u00e5 v\u00e6re i kontakt med vannet. Gr\u00f8nnsaker som asparges, brokkoli, blomk\u00e5l, mais og spinat er \u00f8mfintlige for varme og b\u00f8r helst dampes, mens poteter og gulr\u00f8tter t\u00e5ler koking bedre.<\/p>\n\n\n<h3 class=\"wp-block-heading\" ><strong>Koking av gr\u00f8nnsaker<\/strong><\/h3>\n\n\n<p style=\"text-align:left;\">N\u00e5r du koker gr\u00f8nnsakene, lekker mange av n\u00e6ringsstoffene ut i kokevannet \u2013 faktisk s\u00e5 mye som 20 til 50 prosent av vitaminene, mineralene og de gunstige plantestoffene kan g\u00e5 tapt under koking. Skal du lage suppe og bruke kokevannet, er dette ikke av like stor betydning som n\u00e5r du planlegger \u00e5 helle av kokevannet. For \u00e5 minimere lekkasjen av n\u00e6ringsstoffer er det derfor viktig \u00e5 kutte gr\u00f8nnsakene i store biter, bruke lite vann og koke under lokk.<\/p>\n\n\n<h3 class=\"wp-block-heading\" ><strong>Wok er ogs\u00e5 bra<\/strong><\/h3>\n\n\n<p style=\"text-align:left;\">N\u00e5r du woker gr\u00f8nnsakene utsetter du de for sterk varme, men ettersom de blir stekt veldig kort og beholder spr\u00f8heten sin, vil mange av n\u00e6ringsstoffene forbli i gr\u00f8nnsakene.
